Mono- and Diglycerides are used as emulsifiers - combining two ingredients that don't normally want to combine. Also, they function as a stabilizer and thickener.

For us normal folks, it means it helps (liquid) ingredients mix together, keep the ingredients from separating and helps keeps the end product rich and smooth.

From wikipedia,
Mono- and Diglycerides are common food additives used to blend together certain ingredients, such as oil and water, which would not otherwise blend well.
