How do you cook mushrooms with Green Beans?

I like to take fresh green beans, rinse & snap into 1" pieces or so. In large pan add green beans, sliced onion, a few cloves of garlic minced, salt & pepper. Add just enough water to cover, then bring to a simmer. Cook on low for a couple of hours or til tender. During last 30 minutes of cooking, I toss in sliced baby bela's & a little butter or bacon fat.......Yummy!!

Steam beans quickly until they are crisp/tender plunge in ice water to stop cooking, drain thoroughly. Using a skillet, put in some olive oil , about a tablespoon, cook mushrooms on medium high until they are browned. At this point, after the mushrooms take on color, you can add a tbsp. of butter and toss in the beans and add salt and pepper to taste. Cook until the beans are heated through. Another way is to use a couple of pieces of bacon, sliced into small pieces. Put them in a heated skillet, when the bacon is crisped, remove from pan and add some minced shallots to the rendered bacon drippings along with the mushrooms, cook the same way as previously. Put them on your serving platter and sprinkle with bacon pieces.

Baked Green Beans with Mushrooms & Pine nuts:

30 min 10 min prep
4 servings

1 lb green beans, snipped but left whole
1/2 lb mushrooms, cleaned and thinly sliced
1/2 cup pine nuts, toasted
1 tablespoon butter or margarine or lite olive oil
3 tablespoons shallots, finely chopped
1/2 teaspoon dried thyme
6 tablespoons madeira wine (substitute with Medium Sherry or apple juice)
salt & pepper

1. Saute the mushrooms & shallots in the Oil (butter) for a minute or two, sprinkle in the thyme Line a baking dish with foil (use enough so you will be able to close over top of the beans).
2. Pour the Madeira into the bottom of the foil lined dish, add beans, top with mushroom mixture.
3. Seal the foil.
4. Bake in 375 oven for apprx 30 minutes (adjust time to your liking of crispness). Open foil and sprinkle with toasted pine nuts

sautee the shrooms in butter and then add beans to heat

I would stir-fry them in a pan with some soy sauce, sesame oil, garlic, a pinch of salt and pepper.
