The last time I made an angel food cake, it was almost hard to cut with a fork (we were fighting with it when trying to eat it) I'm wondering if I over mixed it or over baked it. Does anyone have any ideas?

It might have been a combination but if you overmix it the air will come out of the eggwhites and that makes the cake become hard. Overbaking gets the rest of the moisture out and that equals to a tough cake...

It could be several things - eggs must be super fresh or it will toughen the cake. You could have also baked it a little too much - next time cut baking time by 5 or 6 minutes & see if that helps.

If it does happen again & if you're like me, it will - it's quite easy to fix. Take & drizzle a little amaretto or hazlenut liquior & set in fridge for about 15 minutes. The cake will absorb the liquor & make it very moist and tasty!

Well, the last time I made angel food cake i over baked it and it came out soooo hard that I had to throw it away. The angel food cake has to be watched very carefully and taken out of the oven at the right time!!!

Usually it's a result of over mixing. Try adding a small amount of egg whites, first and beating thoroughly to lighten your batter, then gently fold in the remaining egg whites. I find I have good results when I can actually still see streaks of white from the egg whites. Good luck.
