Macaroni Salad for 100:
6 lb. fully cooked ham, cubed
6 lb. macaroni, cooked & drained and rinsed under cold water and drained
3 lb. shredded cheddar cheese
2 bags, frozen peas, thawed, 20 ounces each
2 bunches celery, chopped (12 cups)
2 lg. onions, chopped (2 1/2 cups)
2 cans pitted sliced ripe olives, drained
Dressing
2 qt. mayonnaise
1 bottle western or french salad dressing
1/4 cup vinegar
1/4 cup sugar
1 cup light cream
1 1/2 tsp. onion salt
1 1/2 tsp. garlic salt
1 tsp. salt
1 tsp. pepper
Combine first 7 ingredients. Combine all dressing ingredients; pour over the ham mixture and toss well to coat. Refrigerate.

CLASSIC MACARONI SALAD- MY MOM'S RECIPE SERVES 6
• 1 C mayonnaise
• 2 T vinegar
• 1 t sugar
• 1 t salt
• 1/4 t pepper
• 8 oz elbow macaroni, cooked,drained (about 2 1/2 C dry)
• 1 C sliced celery
• 1 C chopped green or red pepper
• 1/4 C chopped onion
Method:
Combine dressing ingredients, mix with remaining pasta and vegetables. Chill.

INGREDIENTS:

1/3 to 1/2 cup mayonnaise or salad dressing
2 teaspoons sugar
2 teaspoons vinegar
1/2 teaspoon salt, or to taste
1/2 teaspoon prepared mustard
pepper, to taste
PREPARATION:
Combine all macaroni salad recipe ingredients, using about 1/3 cup of mayonnaise and stir well. Add a little more mayonnaise, if necessary. Taste and adjust seasonings. Cover and chill for several hours before serving.
Makes about 4 sevings of macaroni salad.

WORLD'S BEST MACARONI SALAD
1 1/2 lb box of elbow macaroni
1/2 bunch of green onions - chopped
1/2 tsp salt (or more to taste)
1/2 ea. red, orange, green and yellow peppers. total: 2 whole peppers
2 tsp dijon mustard (generous)
1 1/2 cups Hellman's Mayonnaise
celery salt
Cook Macaroni in salted water. Drain noodles.
While noodles are still hot, mix in mustard and mayonnaise in large bowl.
Mixture should be wet, but not creamy. Stir in Onions and peppers and salt. Mix well.
Taste for salt and mayonnaise content. Add more if needed. Coat top of salad with a sprinkling of celery salt and stir in.
Cover and refrigerate a few hours to allow onion and pepper flavors to permeate.
Serve cold.
**We slice up the left over peppers and serve with Ranch dressing as a before the picnic snack**

I work at a catering service and this is the recipe we use
Cook 4 lbs of macaroni drain and cool.
add 2 cup chopped celery, 2 cup chopped onion, 2 cup sweet relish, 1 cup sugar, and enough salad dressing to your taste. {some poeple like real mayo but we use the salad dressing}

I dont know exact measurements (my famiy has a habit of eyeballing it) but here are the ingrediants:
-elbow noodles
-miracle whip/ salad dressing
-eggs
-chopped dill pickles
-tomatoes
-cucumbers
-mustard
-paprika
Pretty much at ingrediants to your discretion.
