Getting hotter peppers from your plants requires a little timing and a someplanning when you plant your pepper plants. Identical peppers from different plants can have some wide ranges in heat. the two factors that control heat are "hang time and moisture content. The longer the pepper is allowed to develop thge hotter it will be. Be sure never to over water the pants because a pepper full of moisture is one that is less hot than a drier counterpart. good luck and pick the pepper when the stem starts to shrivel.

It is at it's hottest when fully ripe. The chilli will be a ripe tomato red and the stalk joing it to the plant will be slightly shrivelled,

When they turn a nice tomato red, they will keep for ages and even dry out. As long as the seeds remain in the chilli until used you will achieve maximum spice and heat. For maximum power use bird's eye chillies.

its a brilliant red, and will more often than not fall of the plant with a light touch. ie you dont have to pill it from the plant. btw, i love the stuff:)
