FRIED CORN CAKES - Bites Of Asia
(Yield:4 servings)
Ingredients:
2 c Sweet corn kernels
1 ea Egg
1 tbsp Yellow curry paste
2 tbsps Rice flour
2 tbsps Light soy sauce
1 tsp Salt
3 tbsps Wheat flour
2 c Vegetable oil
--SAUCE--
4 tbsps Vinegar
4 tb Water
1/4 c Sugar
1 ts Salt
1/2 Chili (crushed)
1/4 c Roasted Peanuts (crushed)
1/4 c Cucumber (thinly sliced)
Preparation:
1. Mix together the corn, egg, curry paste, rice flour, soy sauce and 1 teaspoon salt. Shape the mixture with your hands to form circular cakes about 1 inch in diameter.
2. Dip the cakes in the wheat flour and then fry immediately in the very hot oil. (Do not fry more than 6 to 8 cakes at a time or they will not cook properly.)
3. To make the sauce, bring to a boil the vinegar, water sugar, salt and chili. Let it cool. Pound the peanuts and add to the cooled mixture. Lastly, add the cucumber.

BREADED "DEEP FRIED" CORN
1 c. Bisquick baking mix
1 pkg. frozen corn
1 tsp. baking powder
1/2 water
1 egg
Salt and pepper to taste
Mix all ingredients for batter. Stir in 1/2 package of frozen corn (keeping corn frozen and in small clumps). Drop by small spoonfuls into hot oil and deep fry until golden brown. (Makes four-six large helpings.)

Comanche Fried Corn:
45 min 30 min prep
6 servings
1 large onion, diced
1/2 lb bacon (cooked and diced)
8 ears corn
1 bell pepper, diced
1 (4 ounce) can ortega canned chilies (any heat) (optional)
1 teaspoon garlic
1 pinch salt and black pepper
1. First, fry the bacon. Let it cool and tear into small pieces.
2. Leave the grease in the pot and set aside.
3. Shuck and wash the corn. Make sure you get all the silk.
4. With a sharp knife, slice the kernels off of the cob. Then keep scraping until you reach the cob to get all the juice and corn.
5. Sauté the onion in the reserved grease until they are clear.
6. Add the corn, bacon, chiles, salt & pepper and the garlic.
7. Simmer over a low heat and stir often so it doesn't stick.
8. When it's heated through, drain the grease if preferred and serve.
9. Note: This calls for fresh corn, but it's super easy to use canned or frozen.

Corn Macque Choux (Fried Corn)
Ingredients:
1 onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 lb corn kernels (cut from the cob or frozen and thawed)
3 tablespoons unsalted butter
Kosher salt
Fresh ground black pepper
1 pinch cayenne
Method:
In the skillet, heat the butter over medium low heat until melted. Add the onion and saute until wilted but not brown. Add the bell peppers and the corn and stir to coat everything with butter, sprinkle with some salt, pepper, and cayenne, and continue cooking over med-low heat, stirring frequently, until all liquid (if any) completely evaporates, the vegetables start to take on a slight caramalization and the whole room smells really, really good. (This should take about 20 minutes). Taste, adjust the seasonings if you need to, and serve. Note: I say to use a cast iron skillet because, as with cornbread, I believe this dish suffers in flavor if it is not cooked in one. However, if you don't have one, you can use another skillet- just know that it would be much better cooked in a cast iron skillet.

INGREDIENTS:
6 ears corn
2 tablespoons fresh bacon drippings or butter
1/2 teaspoon salt
2 teaspoons sugar
1/4 teaspoon black pepper
PREPARATION:
Slice the corn from the cob. Scrape the cob downward to get any remaining corn left near the cob. Heat a heavy skillet and add the bacon fat or butter. When hot, add corn and cook for 15 to 20 minutes, stirring often.
Sprinkle with the salt, sugar, and pepper. Serve hot.
Serves 4 to 5.

Fried corn is also a southern dish. It's quite simple to make. Get fresh corn on the cob, cut of the cob,1/2 stick of butter, salt, pepper, 1tablespoon of flour. Saute corn in butter, then sprinkle flour, that gives you the creamy corn. If you want it thicker to cut then add more flour as needed. Good Luck

True fried corn is a southern dish which involves scraping the kernals & milk from the cob & cooking with bacon fat in a cast-iron skillet. You are referring to "corn nuggets" which can be found on any chinese buffet, but is actually an elementary school lunch item.........

FRIED CORN
4 strips bacon, fried
1 dozen ears corn
Water
Fry bacon and set aside. Scrape corn from cob. Put in skillet with bacon fat. Cover corn with water to level. Stir and fry until all water is gone. Bacon can be crumbled and added or discarded.

You can also fry corn on the cob like The Blackeyed Pea restaurant...Break cobs in half, roll in flour, then dip in egg, then roll in flour again...drop into deep fryer or large pot of hot canola oil and once golden brown remove and drain on paper towels...sprinkle with favorite seasonings...chili powder and lemon pepper are my preferences.

just buy like can's meat for dogs and make them in cake form and put like biscuits around it to make it look nice
