For a whole rack of ribs, we prefer to use our smoker - they turn out wonderful!! I do like to do the country style ribs on the charcoal grill when the smoker would take too much time. First I parboil the ribs for about 10 minutes, then sprinkle with my favorite dry rub. Grill over medium coals til done. If you like sauce, brush on ribs the last 15 - 20 minutes of grilling.........

A) use a rub. try this one:
* 1/2 cup brown sugar
* 1/4 cup paprika
* 1 tablespoon fresh ground black pepper
* 1 tablespoon kosher salt
* 1 tablespoon chili powder
* 3/4 tablespoon garlic powder ( i make my own)
* 3/4 tablespoon onion powder (again, i make my own)
* 1 teaspoon cayenne
Rub it in there like your giving the ribs a good massage, then let it cure for at least a few hours in the fridge.
B) Use some smoke! Get some wood chips (you can usually buy these at any grocery. There next to the charcoal briquets) Soak them in water for about 20 minutes, then drain the water off and make an aluminum foil pouch for them. Put this pouch right next to the heat source under the grill (but not right on it)
C) use low heat and don't put ribs directly over the heat source. Also, wrapping the ribs in foil keeps them nice and juicy.
Remember, the best ribs take a long time to cook. It's hard to keep temperatures low enough on a grill. To be honest with you i'd set my oven on about 250 and cook them in there instead, the only problem being that it's alot harder to get smoke. To offset this, i use chipotle powder (smoked jalapenos dried and ground into powder) instead of cayenne in my rub. However, the BEST option as already mentioned, is to use a smoker.

I boil them first maybe for 20 minutes. I make my own BBQ sauce but you can use Lloyds, or some other brand you like. Grill on low heat. Turn them often and cook for at least a couple of hours. Put the sauce on the last 30 minutes so it doesn't all burn off.
