I love to make a roast in the crock-pot on a rainy day. Take roast ( beef or pork, whichever you like) and place in bottom of crock-pot. Add baby red potatoes cut in half, chopped onion & baby carrots. Add 1pkg Lipton onion soup mix, 1 can cream of mushroom soup, 1 soup can of water, 1 stick of butter and salt & pepper. Cook on low 8 hours or til meat is done - it will start to fall apart. Serve with homemade cornbread!!

2 containers (15 oz. ea.) ricotta cheese
2 cups shredded mozzarella cheese (about 8 oz.)
1/2 cup grated Parmesan cheese
2 eggs
2 jars (1 lb. 10 oz. ea.) Pasta Sauce
12 uncooked lasagna noodles
1. Preheat oven to 375°. In bowl, combine ricotta, 1 cup mozzarella, 1/4 cup Parmesan cheese and eggs.
2. In 13 x 9-inch baking dish, spread 1 cup Pasta Sauce. Layer 4 uncooked noodles, then 1 cup Sauce and 1/2 of the ricotta mixture; repeat. Top with remaining 4 uncooked noodles and 2 cups Sauce. Reserve remaining sauce. Cover tightly with aluminum foil and bake 1 hour.
3. Remove foil and sprinkle with remaining cheeses. Bake uncovered an additional 10 minutes. Let stand 10 minutes before serving. Serve with remaining Sauce, heated.
VARIATION: For a twist on a classic...add 1 lb. ground beef, cooked, to Pasta Sauce.
NOTE: Recipe can be halved. Bake in an 11 x 7-inch baking dish 1 hour. Continue as above, omitting last 10 minutes of baking.

I do not know will you like it, but I found it on the yahoo food, and when i have tried it i just tough it was great!
1. 1 (9 ounce) package Cheese Tortellini
2. 1 (10.75 ounce) can Tomato Soup
3. 1 1/2 cups Milk
4. 2 tablespoons Truffle Olive Oil
5. 1 (6 ounce) package Parmesan Cheese
1. Preheat oven to 375 degrees.
2. Place two heaping tablespoons of parmesan cheese onto a non-stick cookie sheet and place in oven for 10 minutes.
3. Dump tomato soup, milk, and tortellinis into a medium sauce pan and mix.
4. Place on medium heat on stovetop burner for 10 minutes.
5. Serve soup garnished with truffle oil floating on top and Parmesan Krisps on side!
Yield: 4 servings

A nice meal on a cold, rainy day is all sorts of hot stews and soups and here's something a little different: buy a few yams, bake them in the oven, and split them down the middle and fill with anything from honey and butter to cinnamon, nutmeg, maple syrup--anything sweet. They're really amazing, and are packed with nutrients!

2 pounds ground beef
8 ounces elbow macaroni
2/3 cup chopped onion
1 cup water
2 1/2 cups condensed tomato soup (I used 1 can tomato and the rest tomato bisque)
1/4 cup tomato sauce
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon oregano
2/3 cup chopped green pepper
8 ounces shredded cheddar cheese (I used mild fancy shredded)
Brown ground beef. Cook noodles and drain. Combine cooked beef, onions, water, soup, tomato sauce, salt, pepper, oregano and green pepper. Simmer about 10 minutes.
Spread half of noodles in 9-by-13-inch glass baking dish. Cover with half ground beef mixture. Sprinkle with half cheese. Repeat layers. Bake at 350 degrees 25 to 30 minutes or until bubbly hot. Makes 15 servings.

My favorite easy rainy day meal is chili stew - take a can of beef stew and mix in a can of chili and you're done. Heat and serve. My favorite brands are Dinty Moore stew and Dennison's chili with beans. I don't recommend Stagg chili for this because it is a little too sweet. Hormel works okay too, but Dennison's is thicker.

1-chile verde,fried potatoes,scrambled eggs. im sure you can handle the last 2 but heres a quick and tasty way to make chile verde to smother your potatoes and a little extra for burritos to snack on.
ingredients-
pork in bite size pieces( you can do them yourself from chops or a roast or you can get them already cut in pieces.
green chile(nothing beats fresh) roasted and peeled and chopped or the easy way but not as flavorful you can get them in a can. ( if you use canned grab a very small can of jalapeno for a little bite)
oil and flour as needed
salt and pepper as needed
small can of tomato sauce mainly for color
oil in your pan and brown your meatthen coat it well with a few tablespoons of flour until the flour browns with the meat from the juices of the pork
add water to your pork slowly stirring as it begins to thicken to a gravy like mix ture to the thickness that is to your liking add green chile and/or spoonful of chopped jalapeno and let it simmer for about 30 min allowing the flavors to come together adding water if needed if over thickens and add 1/2 can of tomato sauce so not so white and pasty looking will have no effect on the flavor. then all you need is tortillas to finish it up

get your crock pot out and put in a rack of ribs with a bottle of your favorite bbq sauce. Trim as much fat off ribs as possible. Cook on high or low until they start falling off the bone
