Definetly the humble spud.
You can live on the things, or not as the Irish spud blight proved.
Boiled, baked, chipped, grilled, fryed, mashed, the list goes on. Most versitile.
I could happily lose celery & cucumber, as although I like them, they take more energy to eat than they give.
Ah though a thought occured, are we classing cereals in or out of the equation, as without wheat, barley etc, we would have no bread and equally importantly, no beer.
If I think about my travels across Mid-East deserts, I woul have rapidly perished without supplies on board.
If the UK was without vegetation, and unable to import stuff, such would be the case.
Spuds with fish then, as cattle, pigs, sheep etc and indeed all edible land animals would also perish in time.
It is a scary and most interesting prospect that you raise, let us all trust that it will not come to that.
Your Q has given me food for thought. (pun intended)

The tomato because it's probably the most needed in cooking and fairly versatile. Or maybe, for the same reason, the onion?
I didn't know the potato was a vegetable!
PS my daughter has just told me that tomato is fruit so it's the onion then!

Spinach cos I like my greens but is also nutritious (not much good on its own though)
ALTHOUGH
Non genetically modified Soya beans would probably be more sensible as these are highly nutritious, have proteins, vitamins and minerals, you can sprout them, eat raw, cook, mash, use in caseroles. make tofu and milk from + lots of other things I suspect.
SECOND CHOICE PROBABLY for survival purposes

Choose grass.
It includes all corn, wheat etc
