Pasta Carbonara Sauce
* 2 onions
* 1 clove garlic
* 2 sprigs of fresh rosemary (dried will be ok but fresh tastes much better)
* 1 packet of bacon / pancetta
* 3 tablespoons of olive oil
* Traditional long pasta like tagliatelle or any pasta that you have in the cupboard
* Fresh single cream
Put pasta on to cook according to packet instructions.
* Note that the sauce will only take approx 8 – 10 mins so work out when to start this according to how long the pasta takes to cook.
Finely chop the onions, garlic, rosemary and gently fry in the olive oil for approx 3 mins stirring continuously.
Add the roughly chopped bacon / pancetta / ham and cook until crispy approx 5 mins, stirring continuously to avoid burning.
Spoon out any excess oil from the pan.
Reduce heat to low and add cream and stir gently, ensuring all ingredients are covered in cream.
Drain pasta and add to sauce. Stir pasta and sauce to ensure all pasta is covered.
Serve immediately and enjoy!!!
mum and child Variations
If cooking this for babies / children, substitute the bacon for ham as this reduces the salt content in the meal, but for adults bacon / pancetta is much tastier.
Try adding chopped courgettes and mushrooms when cooking for the little ones as it will be so tasty they won't even notice there are vegetables in it.

This is too funny. A 14 month old would most likely be completely satisfied with ketchup. Kids just don't have the same developed palate as adults. That's why kids think mushrooms and onions are ucky, but think spaghetti-o's and hot dogs are this shizzle. Try putting slices of hot dogs in their spaghetti-o's. To a kid, that's better than seared foie and fig sauce.
Oh, btw...hinkyman: If the carbonara you're having isn't spicy, it isn't carbonara...

There are better things to feed your 14 month old than a spicy carbonara sauce. A baby needs baby food, with adult foods introduced slowly from ages 12 - 36 months so you can watch for possible allergic reactions.........

I wouldnt give this to a young baby - thats what we were told with my child who at 16 months had this on hol in italy and had to be taken to hospital after an allergic reaction to the raw egg. The Italian lady doc told us that she was too young for this food and that even the italians did not give this to their children!!! (until about 4 yrs old)

You can have ham or bacon probably ham because ham is not so salty with eggs and cream
