Nothing too complicated or anything a professional would buy, but I want one with an optical zoom, image stabilizer and 6+ MP.

I think the COOLEST small camera is the Canon Powershot SD700-IS. It has 4X optical zoom (35-140 mm), image stabilization and 6 MP, so it fits your criteria perfectly. I bought one for my daughter's birthday and have been playing around with it for a couple of days until her birthday gets here. I was going to get this model for myself, but it was simply sold out everywhere for a couple of months when I was ready to buy. Maybe I should have waited...
It costs $300, has good zoom range and the image stabilization to go with it. It's SMALL and good looking. Great LCD and it still has an optical viewfinder.

It has no image stabilizer but one of the best cameras price wise and value wise.. It's a fun camera to own,.

I have a Casio Exilim EX-Z60 and it's a 6 Mega Pixels. It has a 2.5 inch screen and takes excellent pictures.I love it. It cost $350 when I bought it, but Walmart has it for $200.

Go for the SD-1000 that is coming in a while or the SD700 is a brilliant camera with a very bright lcd

Sony is probably better than canon, they got that new face detection and sony is my favorite brand.
