Kangaroo is very tasty, and emu tastes a bit like duck.
the reason for their being on the coat of arms is that they are unable to walk backwards, meaning that Australia will only move forwards.

Australia is probably the only country in the world where both critters on the coat of arms are regularly eaten. I have even seen "Coat of Arms" as a dish on a restaurant menu describing kangaroo and emu.
