i would yam away, i would try and be discreet and not be openly going for the plate as fast as i can
it would be rude if you kind of ate the whole plate and then got up to leave straight away though.

most hosts love it when their efforts are appreciated, and take it as a compliment, they have taken the time and effort to make the gesture so enjoy the fact that someone has really enjoyed it
i think all too many times we worry about looking polite and doing the right thing...... but we don't actually know what the particular 'right thing' is, especially when dealing with someone else's feelings and usually err too much on the side of caution
there are more polite ways of doing it though than stuffing your face full... and looking greedy
for example....... don't pick up the plate, and keep it all to yourself until you've eaten every last morsel off the plate....lol
always be complimentary, as you can't go too far wrong then, and if you appeal to there caring side and massage the other persons ego a bit as well.......... you shouldn't go too far wrong, in my opinion
i've based this answer on my experience, and common sense.... which actually seems to be a little forgotten these days
there can't always be 'the perfect answer' for every given situation - can there?
anyway, go with the flow - enjoy and appreciate the food
or encourage others to do it when visiting you...... sure to keep your wife happy then
she'll appreciate being appreciated

say to your host-
"I didnt realise I was so hungry- I didnt have dinner/lunch..etc, these are delicious! do you have anything I could eat insted of stealing all of the food from everyone else! ?"
If taken as a joke. laugh along a bit then say,
"no really, even an apple would be great"
a host who is not really ok with you eating any more from her house will offer you an apple- in which case you stop after the apple, a host who wants you to feel comfortable will offer you a sandwich- all to yourself!
Eat slowly, chew alot and drink a whole glass of water per sandwich, you'll not actually feel full until 30 mins AFTER eating so dont expect an instant reaction!

i am a landscaper and i have a strict rule on my sites, if the customer offers coffee or tea you always except and if there are biscuits you clear the plate even if you pop them in your pocket for later,
this is simply cos if you refuse a coffee you rarely get offered a second and the second may be the one your desperate for lol, and if the biscuits are untouched you dont usually get them a second time and that will always be the time a wee hob nob or digestive would go down lovely

politely take a bite and than say (in a polite but loud enough voice to be heard...) "actually i didn't have a chance for breakfast as my better half had eaten all the food going and i couldn't have any lunch as the greedy kids ate it all...."!! they shall then hopefully take pity and fill the plate more full with the aforementioned biscuits (hopefully pink wafer or viscounts) and sandwiches (better be cheese or ham and pickle or else...)!! job done!!

In your head divide how many biscuits or sandwiches there are between the people in the room and then eat your share! As a guest you can always say "wow these are delicious, stop me if i'm being greedy!" that way - you can eat slightly more than your share and the host should feel flattered that you appreciate what they are offering!

I think most of the answers are correct in stating that you have to play it off with a phrase of you did not realize that you were so hungry or did not have anything to eat all day long. In etiquette being polite and playing the game of "I did not realize that..." are the best words we can use.

Discreetly eat a few. then a few more, but don't wolf down the last one, unless everyone else seems uninterested.
Usually the hostess is glad when somebody enjoys the food she puts out, and she doesn't have to throw away what hasn't been eaten by guests.
