I think a black bean dish or dip would go great with that. Just get some canned black beans, heat them up and put some diced onions, tomato and cilantro on top of the dish. Here's a recipe for a black bean dip that's really good and it's pretty easy. Have a great time, sounds like a great menu..and I'd love a recipe of your cilantro lime potato salad, it sounds wonderful!
Black Bean Dip
2 15-ounce cans black beans
2 teaspoons chopped garlic
2 tablespoons chopped fresh cilantro (or 1 T dried)
2 small tomatoes, chopped
2 teaspoons crushed red pepper (or to taste)
1 teaspoon cumin
Juice of 1 lime
1 small onion, finely chopped
Salt and pepper
In a food processor, coarsely chop the black beans, garlic, cilantro and 1 tomato. Transfer to a serving bowl.
Add the red pepper, cumin, lime juice, onion, 1 chopped tomato, and salt and pepper.
Chill, allowing the flavors to blend. Serve with tortilla chips. Makes about 3 cups.

Home made ceasar salad
Get a salad bowl (preferrably wooden)
Rub the inside if the bowl with a cut garlic clove
mash up 6-8 anchovy fillets in the bowl. (Yes you have to use them).
Add juice of 1 lemon
Add about 6 drops of Worchestchire sauce
Add 4 drops of tobasco (more if you like a little bite)
1 raw egg
after all that is mixed up then add 1/3 cup of olive oil slowly while whisking (going for an emulsification)
Add pepper and fresh parmesan
You can make the dressing in the morning. Right before serving toss bite sized romaine lettuce through it (whisk first if you need to). Top with croutons, fresh pepper and fresh parmesan.
Or just top a spinach salad with some warm poppy seed dressing.

You could do fried zucchini with a mint sauce.
Get however many zucchini you need, then slice them at a sharp bias. Then dredge them in egg wash, and bread with bread crumbs, then pan fry.
The sauce is very simple.
1/2 c. White wine vinegar
5 Tbl sugar
5 fresh mint leaves, minced
Put the vinegar and sugar into a pan. When the vinegar evaporates a little, add the mint. Then pour sauce on top, or put in a side dish. This may be a bit tart.
If you are lloking for something everyone will like. Cut sweet potatoes up like french fries, and fry them, add a little kosher salt or sea salt...they are delicious. They have a balance of sweet and salty.

Your menu is so wonderful and colorful, just add more color! Toss some diced eggplant, yellow squash, and a cup of frozen corn (a few rings of sweet onion if everyone likes onion) in some foil with a pat of real butter. Sprinkle on your favorite seasoning, seal the bag, and throw it on the grill! In about 30 minutes you will have a flavorful and colorful side dish that will make any plate look scrumptious! Yum!

What about getting one of those premix tubs of margarita mix that comes with a spigot at the bottom. You open it up and add the required amount of water and the required amount of tequila. Then give it a stir, put back the cover, and put it in the freezer.
At party time take it out and stand it on the table. next to a bunch of glasses with their rims dipped in salt and let anyone who wants a cold drink just get their own through the spigot. It is not a side dish but it is easy to make and easy to serve and goes well with the menu.

i finally found were i put this recipe. this is light and simple. i wish i was coming over for your meal. it sounds so good.
Colorful Citrus Spanish Salad
It is a very pretty salad and has a unique taste. Do not let the dressing ingrediants throw you, it is yummy!
4 servings 20 min 20 min prep
2 cups arugula, torn into pieces
1 cup mandarin oranges, sections
8 radishes, thinly sliced
10 black olives, pitted and halved
1/4 cup orange juice
1 tablespoon lemon juice
2 tablespoons olive oil
1 tablespoon honey
1/8 teaspoon cinnamon
1/8 teaspoon cayenne
salt and pepper
In a bowl wisk together orange juice, lemon juice, olive oil, honey, cinnamon and cayenne. Add salt and pepper to taste.
Pour in to a shakeable container and let dressing sit at least 20minutes before serving.
In large serving bowl, lay out arugula on bottom of plate in single layer.
Next layer, add oranges.
Next layer, radishes.
Top dish with the olives.
Before serving add some of the dressing to top of bowl and toss salad. Serve salad and pass extra dressing to please.

Cold macaroni salad
Coleslaw.
Cold asparagas salad - grill or roast the asparagus with evoo, and serve on a bed of butter lettuce, surrounded by sliced roma tomatoes - s & P, to taste - sprinkle w fresh-grated parmesan, if desired.
Grilled portabello mushrooms.
Spinach salad with strawberries (& feta cheese).
Tomato & cucumber salad.
Grilled corn on the cob.

Oh, my sombrero dip would be perfect...
Layer on a platter and serve with tortilla chips:
Refried beans
Salsa
Sour Cream
Chopped tomato
Shredded cheddar cheese
scallions
Soooooo good!
Or how about a pot of chili? People could put some on their burgers or have a little on the side..

Grill some veggies (onions, squash, zucchini with a little olive oil wrapped in a foil pouch and put on the grill) and serve fruit margaritas (peach and strawberry - let your guest decide their fave)

my co-worker suggests a few veggie skewers with mushrooms, peppers, pineapple and zucchini, eggplant...drizzle with olive oil, and fresh cracked black pepper and sea salt...you don't have to do all of these just some or add your own veggie ideas...
Might I say, your dinner menu sounds fantastic!
You could also do Gazpacho or another cold soup, like cucumber mint or similar...most of these are just some chicken stock, your veggies and whir it up in the food processor for a few clicks and chill it...serve with a dollop of sour cream and/or a few chives...
