Unfortunately, they don't have them in Texas. And ramp season is almost over!

That is exactly how I eat mine! (Minus the bread) I absolutely LOVE ramps. We talked a lot about them right before they came in season. Every time we talked about them it made my stomach ache from craving pangs! Every year I wait anxiously. It is so hard waiting for them to come in season. Someone felt sorry for me and gave me the address for a company that harvest them for you located in MI. It's expensive, but worth it if you need a fix! http://www.wild-harvest.com/index.htm

My neighbor has this great recipe for Winter Soup and leeks are one of the ingredients. I love ramps so much I am going to attempt to make this recipe with ramps in place of the leeks. I also use ramps when sauteeing a chicken breast. Mmmm what flavor! It's a complete injustice to America that there aren't ramp farms. Everyone should have access to these things!!! They are way better than onions and garlic, but I love them too. Do you like Molly Moochers? Try them sauteed together sometime! A total 10 on the yum factor scale!

For those who are wondering what ramps are, from Answers.com:

"This wild onion grows from Canada to the Carolinas and resembles a scallion with broad leaves. Also known as wild leek, ramp has an assertive, garlicky-onion flavor. It can be found-usually only in specialty produce markets-from March to June. Choose those that are firm with bright-colored greenery. Wrap tightly in a plastic bag and refrigerate for up to a week. Trim the root ends just before using. Though the flavor of a ramp is slightly stronger than the leek, scallion or onion, it can be used-raw or cooked-in many dishes as a substitute for any of those three."

I have never tried them, I think. Do they taste similar to leeks (I guess they do)? If so, I will definetively love them.

Yes, I did two years ago when I was living in N.C. near the cherokee indians. They told me about them. They have a ramp festival there every year. They are very good.

I grow them and cut them into 1/8 slices with a scissors to drop into a garden salad in place of onions. You get the onion taste and you get the fiber. In New England the beauty of them, beyond their taste, is that they come up every year and last till it snows and there aren't many salad ingredients you can say that about.
