It depends if you yourself has become a Mormon. Most Mormons wish to be married into the temple, because they believe that when they are married in the temple then death will not seperate them, they will be together for all eternity.
However, if Mormons marry someone out of the religion, then maybe in years to come they will be sealed in the temple, but it isn't considered a marriage if you did it after you got married, its just a ceremony.

This is a really long and complicated situation, but the short answer is no, you don't have to have 2 weddings to be allowed into a Mormon church.

Anyone of any religion is welcome in a Mormon CHURCH any time (when it is open of course).

I think what you might be referring to is if the Catholic becomes a Mormon later on and then the 2 Mormons want to get "sealed" as they call it (another long story), then they will have another wedding type ceremony. This is required to be allowed into the Mormon TEMPLE, which is totally different than a church.

The church is where you go every Sunday, the temple is where you go for special ceremonies and things like that.

If you want more specific information, you may have to ask an actual Mormon, or maybe contact the missionaries or something, but the best I could do is give you a brief overview.

If you get married in a Catholic church, then later both join the LDS church, then they could later be sealed in the temple. It would not be like a second wedding, and there is no reason why we would not recognize a legal marriage done in another church.

If the two of them convert mormons then they would want to be sealed forever in the temple.

Mormons make new rules all the time. This may be their way to try to get you to convert.
