Kate's Best Basic Pizza Sauce
Ingredients:
35 ounces canned crushed San Marzano tomatoes
1 teaspoon basil
1 bay leaf
1 clove garlic, peeled & crushed
2 tablespoons tomato paste
pinch of salt
pinch of sugar
Directions:
Pour the contents of the tomato can into a heavy saucepan. (If they aren't crushed, simply mash them up with a fork.) Add the herbs, garlic, tomato paste, salt and sugar. Bring to a bubble over medium heat, stirring to mix the seasonings. As soon as the sauce begins to bubble, turn the heat to low and maintain the sauce at a gentle simmer. Cook, uncovered, stirring from time to time, for at least twenty minutes. The longer you cook the sauce the more flavorful it will be.

Authentic pizza sauce
ingredients
a 28-ounce can crushed tomatoes in puree (preferably Italian; about 3 1/2 cups)
3 tablespoons olive oil preparation
In a large non-reactive saucepan bring tomatoes and oil to a simmer and simmer, uncovered, stirring occasionally, 20 minutes, or until sauce is reduces to about 2 1/2 cups. Season sauce with salt and cool to room temperature. (Sauce keeps, covered and chilled, 5 days.)

Pizza Sauce Recipe
INGREDIENTS:
1 clove garlic, mashed and minced
1 teaspoon salt
1 can (6 ounces) tomato paste
1 can (8 ounces) tomato sauce
1/2 teaspoon sugar
1/8 teaspoon pepper
1/2 teaspoon oregano
1 tablespoon olive oil
dash red pepper, optional
PREPARATION:
Combine all ingredients. Makes about 1 1/2 cups, enough for 2 pizzas.

Pizza White Sauce Recipe
INGREDIENTS:
1/3 cup flour
3/4 tsp salt
1/8 tsp pepper
1/8 tsp paprika
1/8 tsp onion powder
2 cups milk
1 Tbsp margarine or butter
PREPARATION:
Place flour, salt, pepper, paprika, and onion powder in a small saucepan. Stir to equally distribute. Slowly whisk in the milk until no lumps remain. Bring to a boil while stirring to prevent lumps. When mixture thickens, add margarine and stir until melted

2 tablespoons minced garlic
2 tablespoons oil
1 cup chopped fresh tomatoes
8 ounces tomato sauce
6 ounces tomato paste
1 teaspoon salt
2 teaspoons oregano
2 teaspoons basil
1/8 teaspoon pepper
In lg skillet, saute garlic in oil until tender.
Stir in remaining ingredients.
Simmer for 30 minutes.
Stir occasionally.

GOURMET PIZZA 1 1/2 c. flour 1 pkg. dry active yeast 1 c. warm water 1 tbsp. olive oil Fresh tomatoes Fresh basil 3 cloves of garlic 1/4 c. frozen spinach 1 sm. onion, sliced 1 (4 oz.) can of mushrooms 1/2 lbs. shredded cheese 2 tbsp. grated Parmesan cheese 1/2 c. bacon or pepperoni, chopped (optional) Preheat oven to 450 degrees. Mix flour, water, olive oil and yeast together. Stir 100 strokes, cover. Let rise in warm place for 30 minutes. Lightly grease one 12-inch pizza pan and carefully spread dough on the pan. Pre-cook the dough in oven for 10 minutes. Remove and top with remaining ingredients. Bake fro 15 to 20 minutes. OR CALABRIAN PIZZA This pizza is unique in that the cheese is in the crust rather than on top! If you prefer a somewhat lighter crust, allow it to rise overnight in the refrigerator, then bring to room temperature for 1-2 hours before assembling. Dough: 2 1/2 cups flour 1/2 teaspoon active dry yeast 1/2 cup grated Parmesan or Romano cheese 3 eggs, beaten 2 tablespoons dry white wine pinch of salt 2 tablespoons olive oil or lard Topping: 1 10 oz can whole peeled tomatoes, drained 1/2 teaspoon very finely minced garlic 1/2 inch piece hot red pepper 1/4 teaspoon each basil and oregano 3 tablespoons olive oil or lard 1 teaspoon salt Preheat oven to 450°F. In a mixing bowl, combine flour, cheese, well beaten eggs and salt. Mix dough with hands, stirring in enough white wine mixed with warm water to make a smooth dough. OR GARLIC-GRILLED SPINACH PIZZA WITH CHICKEN 1 Pillsbury All Ready pizza crust 1 1/2 cups tomato sauce 2 tablespoons Parmesan cheese 8 oz. Mozzarella cheese 1/2 lb. thinly sliced chicken breast strips 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry 1 tablespoon olive oil 1 teaspoon garlic, minced 1/4 teaspoon garlic powder 1/2 teaspoon Italian seasoning 1/2 teaspoon extra spicy Mrs. Dash seasoning Preheat oven to 425°F degrees. Baste chicken with olive oil, sprinkle with garlic powder and grill on high heat (or, if you are cooking indoors, use a broiler or grill pan. Turn once to cook evenly on both sides. Coat chicken in spinach and bake until spinach is almost crisp. Set aside; cover and keep warm over very low heat. Roll out pizza crust on a pizza pan sprayed with olive oil spray. Spread sauce, sprinkle on cheeses and seasonings. Bake for 12 to 15 minutes. Top with grilled chicken and spinach. JM
