they say wrapping the skinned chicken in freezer paper and putting it into an old bread bag works the best. other people say the foodsaver is bes or even a plain old freezer bag. the packaging has to be low cost but good quality so no freezer burn is allowed. (little bit at most). any ideas?

I love the food saver!! It really seems to eliminate the freezer burn problem, and the food just keeps better! The initial cost is a little more than more conventional methods, but in the long run, to protect your investment, it's well worth it!!!

The only way to eliminate freezer burn, which is caused by air in the package, is to totally remove the air from the package, the food saver would be the best bet. However, if you cannot afford one, you and wrap the chicken pieces individually in plastic wrap, then in foil for the tightest fit. You can then store the pieces in a gallon size freezer bag and take out only what you need. Unlike vegetables, where you could slide a straw into the bag to suck the air out (don't laugh, it works!) I wouldn't suggest it with raw chicken products. I would recommend putting one whole chicken, usually eight pieces, in one gallon size bag so you know exactly what's in there, or put one type of chicken piece per bag and label "legs", "breasts", etc. Good luck.

You need to remove the air from the packaging. There are vacuum sealers that work well. For my own chickens, I simply press as much as the air out of the packaging (I use freezer ziplocs) as possible. For whole birds this isn't very easy. I usually cut up my chickens before I freeze them. If they are whole birds, the vacuum sealer is probably your best bet.
