With nachos, you can add anything you want. So if you don't have or don't need guacamole, you are still good to go!

Not necessarily. It doesn't go in mine, but it's a nice side for the chips. (I do love guac!) But my nachos are baked, so guac works better chilled on the side. But if you don't have it, don't worry about it.
Must be Nacho Day, I'm having chips and spicy bean dip right now.

it's not necessary, it's all a matter of your personal taste. you have full carte blanche on a dish like this, so feel free to experiment as you wish. I personal put both grounded beef and chicken, refrito, tomatoes, a few kinds of cheeses, and pico de gallo. good luck!
