soak the beans overnight in water that covers them and put 1 tbsp baking soda in it. it'll make it so you don't have terrible gas from the fresh beans. then parboil the beans for 20 minutes until the skins start to wrinkle. now in the slow cooker you have to make sure there is plenty of fluid to cover the beans and so don't put in your thickening agents until the last hour or so. you'll be slow cooking your beans all day so put them in the morning and have chilli for supper. I find putting a really strong cup of coffee in with the beans makes for a delicious bite. so I would brown your turkey and put it in the pot with the beans and 1 diced onion. a diced green pepper, 4 garlic cloves minced, jalapeno peppers sliced to taste. salt and pepper to taste...a bit of sugar to mellow it out....cup coffee....sprinkle of cumin and oregano....2-4 tbsp chili powder, can of diced tomatoes. top up with water cook all day adding more water as needed near the end add tomato paste to thicken and then taste for saltiness and adjust seasonings accordingly. I never follow a recipe I just throw things together.

Sweet Chili:
1 lb hamb
1 can Pintos
1 can Navy
2 cans red beans
2 tbsp cumin
3/4 cup brown sugar
1 sliced sweet pepper (oarnge bell)
1 sliced red bell pepper
brown hamb, dump everything into the cooker and stir well, turn on low and go to work, by the time you get home it will be ready.
you can add some red pepper flakes for heat if you like too

yes, you do have to soak the beans overnight and cook them before starting the second stage of the recipe, which is the chili...soak your beans overnight and cook them according to the package directions...set aside...get a frying pan and fry your ground turkey, add some chopped green pepper, celery, green chiles, onion...cook till brown, place in the bottom of the slow cooker and put in one can of tomato paste, 2 cans of crushed tomatoes and one can of plain tomato sauce, add some powdered chili or , if desired, to taste as well as some lime...and cook for about 4-5 hours on low...
try serving this with some blue corn and white corn chips and blue cheese on top, place under broiler for a couple of minutes...Fantastic!

Allrecipes.com has tens of thousands of good recipes. Yes, by all means cook the beans first. Soak over night or bring them to a boil, cover and turn off heat for one hour. PS wash them first and search for small pebbles that sometimes pass inspection.
I'm a guy who was forced to cook out of necessity. Thirty years later, there aren't many restaurants I prefer over my own cooking. Good Luck and have fun.

Also remember.. even lower quality turkey meat has a good amount of fat... just remember to drain that crap off.
If you wanna go through the hassel.. add 1 water per lb of ground meat, to the high setting and let the meat cook first... strain it good in a Strainer for 10-15 min while still warm, then place it back in the crock with your other goodies and cook it from there... the meat will even more tender.
