This is a recipe that i came up with

Crock Pot Chicken

6-10 Pieces of Chicken Breast/Leg Quarters
2 Cans Dole/Del Monte Pineapple Rings
1 32oz. Bag of White/Yellow/Brown Rice

Skin the chicken

Drain the Pineapple Juice

Add all of the ingredients into the crock pot

Cook it on high or 375 degrees for 10 hours

*Soy sauce can be put on top of the rice and chicken for added flavor*

I have joined one of the Yahoo! Crock Pot Groups. I get tons of recipes on a daily basis. This one came yesterday and I KNOW I'm going to use it sometime this week.

Slow Cooker Fajitas Chicken

* 6 skinless, boneless chicken breasts
* 2 each red and green peppers
* 2 jalapeño peppers (optional)
* fajita or taco seasoning packet
* 3 tbsp all purpose flour
* 1 3/4 Cups chunky salsa
* Toppings such as no fat sour cream, grated cheddar, sliced green
onions and fresh coriander (all optional)

Instructions

1. Slice the chicken into thick strips. Core and seed peppers. Thinly
slice. Seed and finely chop jalapeños. Place all in bowl of a slow
cooker. Sprinkle with seasoning and flour, then stir to evenly mix. Stir
in salsa. Cover and cook on high setting 4 hours or low setting 6 hours.
2. Spoon fajita mixture into bowls. Top with a dab of sour cream.
Sprinkle with a small amount of grated cheese, onions and coriander.
Serve with a warm tortilla on the side. This recipe freezes well.

Italiano Fondue

1 lb lean ground beef
8 oz mozzarella cheese

1/2 c dry red wine

In a skillet cook beef until crumbly; pour off excess fat. In crock- pot, combine beef with dry spaghetti sauce mix, tomato sauce, and cheddar and mozzarella cheeses. Cover and cook on low for 2 hours. Dissolve cornstarch in the wine. Turn control to high. Add dissolved cornstarch. Heat on high for 10 to 15 minutes. Dip chunks of Italian bread into the fondue while keeping the mixture hot in the crock-pot.
