I usually cook mine in a skillet where I've heated some olive oil and garlic. Serve over rice or pasta. You can always cut them up into bite size pieces before and as you cook add some frozen veggies.
You can always cut it up before you cook it, add to skillet of some heated oil, cook through and add fajita seasonings and have fajitas, add some cut up green pepper and onions while cooking.
Grill them up with BBQ sauce or if you still cook in a skillet you can add the BBQ sauce as they get done, just coat thoroughly.
Cut them into thin strips, put in an egg/milk bath, then breadcrumbs and fry in hot peanut oil.

caribbean chicken salad
2 skinless, boneless chicken breast halves
1/2 cup teriyaki marinade sauce
2 tomatoes, seeded and chopped
1/2 cup chopped onion
2 teaspoons minced jalapeno pepper
2 teaspoons chopped fresh cilantro
1/4 cup Dijon mustard
1/4 cup honey
1 1/2 tablespoons white sugar
1 tablespoon vegetable oil
1 1/2 tablespoons cider vinegar
1 1/2 teaspoons lime juice
3/4 pound mixed salad greens
1 (8 ounce) can pineapple chunks, drained
4 cups corn tortilla chips
Place the chicken in a bowl, and cover with the teriyaki marinade sauce. Marinate at least 2 hours in the refrigerator.
In a small bowl mix the tomatoes, onion, jalapeno pepper, and cilantro. Cover salsa, and refrigerate.
In a small bowl, mix the mustard, honey, sugar, oil, vinegar, and lime juice. Cover dressing, and refrigerate.
Preheat the grill for high heat.
Lightly oil grill grate. Place chicken on the grill, and discard marinade. Cook for 6 to 8 minutes on each side, or until juices run clear.
Arrange mixed salad greens on plates. Spoon some of the salsa over each salad, and sprinkle with 1/4 of the pineapple chunks. Break tortilla chips into large chunks, and sprinkle over salads. Lay some of the grilled chicken strips on each salad. Finally, drizzle dressing over each salad, and serve.
Yield: 4 servings

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
chicken breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve cucumber sauce over chicken.

what I like to do is cut up the chicken, heat up some oil add the chicken and when the chicken is almost do add vegs. cook until chicken is done add a half a cup of soy sauce and 11/2 cups of water to the chicken and vegs then add stir-fry noodles Move the chicken and vegs on top of the noodles put a lid on it and let it simmer for 4 to 5 mins. this is very good. I have had no complats about this!!!!

You can make a great chicken salad, just like a ceasar only with ranch dressing.
6 oz boneless cooked chicken breast
lettuce
croutons
black olives
parmesan cheese
Cook chicken, drain
On each plate add salad, olives, croutons and chicken, top with parmesan cheese and add ranch dressing or caesar dressing.

Marinate in italian dressing for a couple of hours, then top with a little minced garlic. Grill over medium coals til done, then serve with wild rice, field peas & snaps and homemade cornbread.....Good southern dinner!!

any seasons! My favorite is to coat in flour seasoned with Seasoned salt, pepper, and lipton onion soup mix...then an egg wash...and then back into the flour mixture and cook in a fryin pan with a a little bit of olive oil...YUM
