I have a friend that has had a virus for a few days...Like chicken Pocks but not. I want to cook him dinner keeping in mind that his mouth hurts.. He has them in there too..Ouch I know.. So does anyone have any suggestions on some meals??? Easy meals. ??

Chicken Noodle Soup
INGREDIENTS
2 (14 ounce) cans chicken broth
2 cups water
3 carrots, chopped
3 stalks celery, chopped
1 pinch ground black pepper
3 slices fresh ginger root
1 tablespoon vegetable oil
1/2 cup chopped cooked chicken breast meat
1/2 cup egg noodles
DIRECTIONS
In a large pot over medium heat combine the broth, water, carrots, celery and ground black pepper and allow to cook. In a medium skillet over medium high heat, combine the ginger, oil and chicken. Saute for about 5 minutes and remove the sliced ginger.
Add the chicken to the broth mixture, bring to a boil and then add the egg noodles. Continue to cook over medium heat for about 15 minutes until noodles and vegetables are tender.

Broccoli Soup
INGREDIENTS
2 cups chicken broth
2 1/2 cups fresh broccoli
1/4 cup chopped onion
1 cup milk
2 tablespoons all-purpose flour
1 cup shredded Cheddar cheese (optional)
1/2 teaspoon dried oregano
salt and pepper to taste
DIRECTIONS
Bring broth to a boil. Add broccoli and onion. Cook for five minutes, or until broccoli is tender.
In a separate bowl, slowly add milk to flour, and mix until well blended.
Stir flour mixture into broth mixture. Cook, stirring constantly, until soup is thick and bubbly. Add cheese if desired; stir until melted. Add seasonings and serve

Pot O' Gold Potato Soup
INGREDIENTS
3/4 cup chopped celery
3/4 cup chopped onion
1/4 cup butter or margarine
2 (14.5 ounce) cans chicken broth
2 1/3 cups mashed potato flakes
1 1/2 cups milk
1/2 cup cubed process American cheese
3/4 teaspoon garlic salt
1/8 teaspoon chili powder
1/2 cup sour cream
DIRECTIONS
In a 3-qt. saucepan, saute celery and onion in butter for 2-3 minutes. stir in broth; bring to boil. Reduce heat. Add potato flakes; cook and stir for 5-7 minutes. Add milk, cheese, garlic salt and chili powder. Cook and stir until cheese is melted. Just before serving, add sour cream and heat through ( do not boil).

Sprinkle chicken breasts with garlic powder, onion powder and seasoning salt - then sautee and enjoy. Couldn't be easier! Great recipe for quick and easy meal, even for the pickiest eater!"


Melt butter in a large skillet over medium high heat. Add chicken and sprinkle with garlic powder, seasoning salt and onion powder. Saute about 10 to 15 minutes on each side, or until chicken is cooked through and juices run clear.

My daughter likes this when she's got a sore throat.

Chicken, Carrot and Cucumber Salad

2 Cans chunk chicken
1 1/4 cup diced English Cucumber
1/2 cup matchstick-cut carrots
1/4 cup light mayonnaise
Pita Chips

Combine all ingredients in a bowl and chill. Serve with pita chips.

Bake 2 or 3 baking potatoes

Add real butter
cheddar cheese
bacon peices
sour cream

Serve with a vegetable like frozen lima beans

Filling, not too spicy, but a comfort food.

gosh...I can't imagine anything that would sit well in that mouth! Poor guy....You want to avoid anything with a tomato or citrus base....

I would probably assume that a bland potato casserole would taste good...

layer mashed potato and country gravy and chicken pieces together in a casserole dish, and top with cheese and bake....
That might sit well...

Ice Cream or jello this will sooth the pain in his mouth and he will not have to work at consuming it. Plus if he can't keep it down it won't look really gross.
