Since you worded "fish" in quotation marks, I don't know if you're referring only to actual fish, or if you're including seafood in general (shrimp, scallops, clams, etc).

But pretty much any firm-fleshed seafood will work well when it's steamed; steaming makes the flesh even more delicate. Also, as far as actual fish goes, it's best not to steam whole fish. For example, if you've caught some trout, it would be better to pan fry, grill, or bake them than to steam them.

Fresh, wild salmon! Put some fresh herbs, like chives, in the water for a livlier flavor.

I like orange roughy or flounder. A little lemon pepper and a little thyme with a dash of salt. YUMMY
