You know if you talk too much if others tend to look away when you start speaking and then try to move away or change the subject and interrupt you. You should only be talking for about 40% or less of the conversation.

you can tell if the person you are talking to really isn't paying attention. My guess would be if you are even asking this question, you probably are talking to much, but it can be a nervous habit. Just make sure the other person has a chance to talk as well...

If you interupt people's conversions.
Not listening, and mostly talking.
People get mad when you talk.
Always have something to say.
Talk for more then two minutes, about the same thing.
Talking too loud.

When people start to just respond with uh-huh's, and/or they're faces look glazed over, you're mouth should probably then shut.
