How about a book on African wildlife? If she wants to be a Vet then anything and everything to do with animals would be appropriate.

This sounds corny but what if you adopt the cheetah then take her to Build-a-Bear and have her make a cheetah type cat as a memory...or you can make the cat for her and include it with the card that tells about the adoption. I think there are probably very cute safari outfits for the stuffed animals. Or what if you buy her a CD or Savings Bond to get her on the road to college.

Go for it. Your daughter would love to think some where in Africa a cheetah is out there that she owns. But you should probably also get her a build a bear cheetah or stuffed animal. The build a bear would help her "see" her animal and she can dress it up and do fun things with while remembering what it stands for!
If your daughter has a wild imagination you could get her a diary with cheetahs on it then you can encourage her to write down all her "adventures" with her cheetah in Africa so it would feel more real.
You could also buy a book about cheetahs to help her think about what he is doing in the wild and what his life is like.
You could go to a zoo with cheetahs on her birthday and while she is watching tehm you can tell her about her b-Day present.

I would take her for a day out. My child's aunt and uncle did this for her and gave her three or four options such as the zoo, shopping, a movie and dinner or lunch was included in each. She still talks about their day together and remarked that it was her favorite present. Sometimes all kids really want from their family is time. We wish more family members would do this, she really gets too many toys!

Take her to a safari park,a good one,somewhere like Longleat,if possible.I imagine it'll be quite pricey but well worth the experience.
