Every single one that I have been around has been really intelligent, but seem to be rather snobby towards people.......Why is that?

Not all dog breeds are very 'open' or affectionate to people they don't know. I never liked german shepherds- they always seemed very stand-offish to me. my husband insisted on having one, and while she isn't very warm to strangers, she kind of ignores them, she is a DOLL with our family. Some dogs just plain don't care too much about people outside their pack (my pugs, however, have never met a person, or other animal, they didn't consider a new best friend immediately).

I think the poodles you've been around are just spoiled alot && their owners get them that way. My best friends poodle is the sweetest dog ever. I used to live next to a sweet poodle, too. It just depends on the owner.

Projection- they LOOK like they should be snobby .... Most of the ones I have met (and thats over a dozen) are slightly clownish and love attention from others
