Use a combination of butter and vegetable oil.Cover them to cook them quicker and make sure to monitor and stir them.Don't turn the heat up too high either,a good medium works great for me.I so had this problem for the longest time until my fiancee accidentally added butter to my potatoes that were in oil.They came out really nice! :) Good luck!

From a health standpoint, we "fry" our potatoes in the oven.
Wash the potatoes, (peel if you wish, but the peel is flavorful and we leave it on,) slice into EQUAL SIZED slices or wedges. (It is very important they are the same size so that some are not over cooked or under cooked.)
Brush lightly with oil (vegetable or olive,) and any seasons you like, such as salt and pepper, arrange in a single layer on a foil covered cookie sheet and bake at 400 degrees until done. (You may turn them once during cooking or not. They are more evenly browned with turning.)
The cooking time will depend on the thickness of your slices, 1/2" slices can be done in 20-25 minutes. Thick wedges may take an hour. You will need to watch them carefully the first few times you make them until you decide what thickness you like.
This recipe lends itself to all sort of variations--adding other seasoning or diced onion.

Try cooking at a slower temperature. They will crisp up, just do not do it so hot. Incidentally I have four men in the house where I live and I can tell who has been cooking because of the number of burned pans left lying around and the smog. I checked this out once and discovered that they will insist on putting the hob rings and the oven and the grill at top temperature - and then they cannot be bothered to clean up after themselves. When you ask them if that pan was used by them they all say "It was not me" as if gremlins have come into the house, cooked themselves a meal and disappeared.
Cook slower and there would be less clearing up to do after!

I agree-you have the heat up too high, fry potatoes on Med-high heat and use a vegtable oil or olive oil to fry them. you can season them while cooking, but do so just before you are going to take them out of the pan as burnt spices can be bitter and bad tasting. If you want to flavor the oil, use fresh herbs or seasonings as they will not burn as fast.

put enough oil to fry and add a little salt.if it still doesn't work then buy a non stick frying pan.

Sounds like you have the heat up too high. Try frying at a lower temp for a longer period.

It does sound like the heat is too high.. Also I use Pam spray and I do not have a problem with them sticking. Lower heat and longer cooking time should help.

THE OIL HAS TO BE HOT, POTATOS HAVE TO BE RINSED AND STRAINED THE WATER, ONCE YOU PUT IN OIL LET THEM FRY, AND WHEN THEY START TURNING GOLDEN TAKE OUT ADD SALT NAMASTE

i never have problems i either use olive or vegetable oil and simmer them slowly never had a problem with sticking
