CARBS! and something that won't stain too much when it comes back up. Pretzels, chips, popcorn. A nice cream-cheese dip. Jello without alcohol (later in the evening, you could play some sort of gambling game where they have to guess which is which). Just be sure to have *something* there, to help soak up all the alcohol going into the body!

Buy a water melon and turn it on its side cut a oval hole in it and start to clean it out a bit but not fully you want some of the melon in there. Now you get some great hard liquor and put some ice in it, Put that piece you cut out back on, then you grab a towel and you roll it a bit from side to side after a bit you take a Phillips screw driver and poke holes in that lid you made, then grab some straws and start handing them out to the guests so there isn't any sharing (some people don't like that kind of thing). Now with the little bit of melon you took out of the water melon you put in the spiked punch or even in the jello shots.
Now my mom is a diabetic and we do this at her house only...
We get oranges and we inject them with anything that is a hard liquor and we freeze it tell the day of the party and then we take out the oranges and let them thaw out and we peel them and hand them out to the family. Remember if you do this use a new needle and make sure it gets taken care of the right way after you do this.

keep it simple, no shellfish because if anyone gets sick you do not want to clean that up. i would go with cheese and crackers, pigs in a blanket, chips and salsa, nachos whatever you would want to eat when you are drunk at 2 in the morning, maybe french toast, you can cut the bread ahead of time into crouton sized pieces, dip in the egg and cinamon, and cook into little french toast bites, then, drizzle a platter with syrup, load it up with the bites, and then sprinkle it with powdered sugar. easy, delicious, and sure to please, offer toothpicks to serve with this will prevent sticky fingers, also, serve the jello shots before the yag because if people get their hands on jello when they are already wasted, they tend to make a mess with it.

If you want a down and dirty party that makes certain everyone gets tanked I would recommend grilled salsa and corn chips.
Grill method:
1 can whole tomatoes
2 jalepenos
1 lime (juice only)
garlic clove
1/4 white onion, grill tomatoes, peppers, and onion. Mix in blender with lime and garlic, salt to taste. Skillet method: add all ingredients plus 1 tbs olive oil and cook over medium till onion is soft, blend for 30 seconds on medium level
This will make your guests keep reaching for their drinks

Considering neither of those are the type of faire you'd find at a classy party, I'd skip the nicer hors d'oeuvres and go for pretzels, pizza rolls, and chips
