I was told by a chef friend of mine to never wash mushrooms or strawberries, as they are porous and will absorb the water, taking away a lot of their flavor. Instead, wipe each one gently with a slightly damp paper towel and that should do the trick.

No. Mushrooms are like a sponge and just absorb water. Then they release it during cooking - not always convenient. I just use a towel to wipe off any dirt and cut out any spots that look funny.

NEVER - NEVER wash mushrooms, they absorb water like a sponge. To clean them wipe them off with a damp paper towel or clean damp cloth kitchen towel.

Dampen a clean rag or paper towels and gently brush any dirt or stuff off of them. If you want to, you can scrape the black gills out w/ the end of a spoon (I do, some ppl don't... up to you.)
