I want to make a potato salad that's different. I hate mayo. I had a mustard-based one before that was a little spicy and awesome! anyone know a recipie like that? (no meat or eggs either)

French Potato Salad

1 pound small white boiling potatoes
1 pound small red boiling potatoes
2 tablespoons good dry white wine
2 tablespoons chicken stock
3 tablespoons Champagne vinegar
1/2 teaspoon Dijon mustard
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
10 tablespoons good olive oil
1/4 cup minced scallions (white and green parts)
2 tablespoons minced fresh dill
2 tablespoons minced flat-leaf parsley
2 tablespoons julienned fresh basil leaves

Drop the white and red potatoes into a large pot of boiling salted water and cook for 20 to 30 minutes, until they are just cooked through. Drain in a colander and place a towel over the potatoes to allow them to steam for 10 more minutes. As soon as you can handle them, cut in 1/2 (quarters if the potatoes are larger) and place in a medium bowl. Toss gently with the wine and chicken stock. Allow the liquids to soak into the warm potatoes before proceeding.
Combine the vinegar, mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper and slowly whisk in the olive oil to make an emulsion. Add the vinaigrette to the potatoes. Add the scallions, dill, parsley, basil, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper and toss. Serve warm or at room temperature.

I have made an Italian version.

Drain and slice potatoes anyway you like.
Instead of mayo splash a bit ( depends on amount of potatoes used)of Balsamic Vinegar and Extra Virgin Olive Oil in it (to taste)while potatoes are still warm.
Add sliced sweet onion )finely sliced rings and cut rings in quarters).
Black pepper to taste
(If you like sprinkle some garlic powder in it also.)
Chopped fresh mint leaves to taste.
Chopped fresh parsley ( not the curly kind)
Stir all together and cover with plastic wrap so all flavors sink in.
Serve warm or cold

I don't like cream based salads either. Look up "German potato salad". It's usually red potatoes, red onions and caraway in a vinaigrette. It can be served warm or cold.

I say go for a German potato salad
3 pounds of red potatoes (new potatoes)
1 package of bacon, cut small and fried up
1 small onion, bite sized pieces
1/2 cup sake (or cider vinegar-your choice)
1 clove garlic, chopped fine
a palmful of sugar
A real generous squirt of your favorite mustard (I like Guldens)
salt and pepper to taste-the whole peppercorns crushed is awesome!
dash of paprika
If you like pickles, throw 'em in-or green olives chopped!

i had one that had a sour cream base and it was so good. All it had in it where red potatoes, sour cream, chives and shredded cheddare cheese it was great.

You Could try sour cream. my sister is allergic to eggs so we either use sour cream, ranch, or miracle whip light.
