Shrimp In Red Wine

Ingredients
2 tb butter
2 tb vegetable oil
2 lb medium shrimp; shelled and
-deveined
3 lg shallots; minced
1 c dry red wine
1/2 c heavy cream
1/2 ts salt
1/4 ts pepper
1 tb chopped parsley
In a large skillet, melt butter in oil over medium heat. Add shrimp and cook, stirring, until just pink, about 1 to 2 minutes.
Remove shrimp to a plate and set aside. Pour off all but 1 tablespoon fat.
Add shallots, reduce heat to low, and cook, stirring, until softened, about 30 seconds.
Pour in wine, raise heat to high, and boil until reduced by half, about 3 minutes. Add cream and boil until reduced by half, about 4 minutes.
Return to shrimp to sauce, reduce heat to medium, and cook, stirring occasionally, until shrimp are opaque throught and sauce is thick enough to coat back of a spoon, about 3 minutes. Season with salt and pepper. Sprinkle with parsley.

I think it would be good. I know it doesn't sound too flavorful, but the main flavor would come from the shrimp. However, I like only lightly seasoned shrimp, so this recipe sounds complete to me.

Don't change that red wine in the recipe!!! Even though we think of white wines going with fish, there are LOTS of wonderful shrimp recipes made with red wine. I'm sure that's a key part of your recipe, so don't change that. Because of that, it probably doesn't need a lot of seasoning. I know it's hard not to change some recipes, but I would give it a try just the way it is. If you were using white wine, then I'd suggest some other seasonings, or other seasings would likely be included if the recipe called for white. Give it a try. Then if you think it needs something, you can add something the next time you make it. I bet the red wine will provide the seasoning you think is missing. I love fresh garlic too, but with the red.. again... might just be enough.

I'm sorry, but I put seasoning on ALL my food--maybe its because I'm black. I would definitely sprinkle some Adobe Seasoning on the shrimp while its frying in the skillet. Trust me, Adobe Seasoning on shrimp or any meat will make it taste so good you'll want to slap somebody.

I'd go for white wine, instead of red. If anything is missing you could add a little Bay Seasoning......it's great in many seafood dishes.........and even a few I can think of that have no fish. I'd add garlic ~ but my family loves garlic in almost everything!

1st of all, I'd definitely use white wine with shrimp, not red. and I add garlic to everything.

Yes, you are missing garlic. Red wine is ok but white is better.
