im frying chickenon a pan and want to season it and soak it with some red wine. any not as expensive ones?

Try Gallo red sweet vermouth.
Add some crushed dried rosemary, dry basil and parsley flakes and chopped garlic.
Marinate your chicken in it for at least two hours.

Quick fry (about 5 min each side) the chicken in peanut oil (make sure oil is at least 350 degrees) on all sides till brown but not cooked. Remove chicken from oil and place in baking pan. Take some of the marinade and pour it in frying pan. Caramelize these two and pour into baking pan with the chicken. Bake chicken for about 10 minutes or until brown on each side(15 to 20 min. total) .
****While chicken is baking saute some mushrooms in the wine mixture. Pour these over the top of chicken while its in oven in the last 10 minutes or so.

I would pan fry and then remove the chicken and deglaze the pan with marsala wine and toss a pound of mushrooms in and then once reduced by half put chicken back in the pan. Serve with herbed orzo.

you can use any wine, red, white or rose, as long you can drink it, don't buy the cooking wines, the are to sour and salty
