WE have done several road trip from the east coast to the west. We always take a cooler stocked with bottled water, soft drinks, fresh fruit and snacks. We also take plastic bowls, cups and forks, knives and spoons and a sharp knife, along with napkins, paper towels, and a big bath towel from home.
Now we go by the grocery store and get lunch meats and cheese and the bags of salad, tomatoes, along with a couple bottles of dressings, plus mayo and mustard. Then we can stop and have lunch any time we want at a rest area. There is nothing worse than having to eat some stuff you don't want because its the only thing available. We use the towel as a table cloth and make our own salads and sandwiches. When we run low on lunch stuff, we make another stop at a grocery. So you don't have to take a week or two worth of stuff with you; just find a big grocery store as you travel, or a Wal Mart.
We take plenty of music on CD's to play as radio stations can fade as you travel. Take a pillow for the person not driving. Take maps and sunscreen and some of that hand sanitizer and some wet wipes for the nasty bathrooms. Do your trip planning ahead of schedule so that you know what attractions you will pass along your route.
A good digital camera is a must and for some fun, get a tripod and plan to stop at each state border and take a picture of the two of you together. We did that.

There are no absolute essentials. There are lots of things that are really, really nice to have, though -- MAPS, trash bag, swim suit, cell phone and AAA books so you can call ahead to get a room before it gets late and their all sold out, CDs, crossword puzzle if you two like to do them together. The most important thing is an adaptable, enjoy-what-comes, attitude.

camera, snacks, money, music (get a cigarette lighter attachment for your ipod so it can charge and play at the same time), cooler so you can buy a drinks and such and snack whenever you feel like it

take a camera!...and maybe a journal if you're going on a long trip.... that way when you print your pictures out you can add them into a scrap book with your journal entries..
