This is a quick easy way.

Open a can of refried beans & place it on a microwavable bowl or plate. Top w/some bottled salsa like Pace Picante Sauce. On top of that add shredded cheese - cheddar, monterey jack, or whatever you like. Then microwave about 2 minutes or so until cheese is melted. You can stop there or top that with a layer of cold sour cream. If you really feel creative, add any or all of the following: chopped green onions, chopped fresh cilantro, chopped avocado, chopped jalapenos - whatever you like, use that - its flexible. Scoop w/tortilla chips - yummy!

I make mine with left over pinto beans or cook them as described below.

1/2 lb. bacon, cut up
2-3 med. onions
2 cloves garlic
1 (16 oz.) can tomato sauce
1 lb. pinto beans
2-3 tbsp. chili powder
1 tsp. salt or to taste

Soak beans overnight. Start in morning. Fry bacon, onion (chopped), garlic (minced) until bacon is crisp and onion and garlic is transparent. Add to beans and boil until soft, about 2 hours. Then add tomato sauce and seasonings. Simmer the rest of the day adding water when necessary. For dip grind through food mill. Serve with sour cream and chips.

This is my husband's recipe, and it's so addictive!

1 can Rosarita refried beans with jalapeno
1/3 pound Velveeta (yeah, I know)
1/2 bottle Taco Bell hot sauce
1 little can of green chiles
Maybe a bit of milk for thinning

Nuke the first 4 and stir occasionally until combined. Stir in a bit of milk until it's the consistency you like.

I swear, you won't be able to stop eating it!

bean dip is very versatile. you can make it however you want it and as fast or as long as you want. you just need a can of refried beans, dump it in a pot with a little bit of milk (a tiny bit) to help it keep from sticking or burning to the bottom, stir it constantly until it gets warm and voila! (it will bubble and pop, just keep stirring until it's uniformly warm); also, you can add salsa (instead of, or in addition to milk), you can add cheese..you can add anything you think would taste good, chopped tomatoes, etc., stir it all up and heat it up and you're good to go! don't stress it; it's very simple and personalized.
