I'm planning a Shower for my sister. There will be around 25 people there. I have never hosted anything this big before and I'm totally lost with the amount of food I should get. I have a whole menu set, and I'm trying to figure out how much to buy for the platters. I don't want too much food but I don't want there to be too little either.

I'm making a cold cut platter with ham, chicken breast, roast beef and salami. Do you think 500gr of each would be enough? Or should I get more?

Veggie Platter - 1 Cauliflower, 1 pack Celery, 1 cucumber, 3 bell peppers, 2 packages baby carrots and 2 boxes of mushrooms. Do you think these amounts would be enough or more?

Fruit Platter - 1 Pineapple, 1 Canteloupe, 1 Honeydew melon, 1 package grapes. This should be enough right?

I know this all sounds stupid but any help would be appreciated.

All other food I'm doing okay with but I'm just having trouble with the platters. I'm also doing a cheese platter...how many, what kinds? Thnks

Yes, I'm also including strawberries but those will be on a seperate plate filled with strawberry ricotta cheese.

Buns will definitely be there too. :)

FINGER SANDWICHES

4 tbsp. butter
1/2 c. water
1/2 c. flour
Dash of salt
2 eggs
1/2 c. shredded Swiss cheese

Melt butter in water. Add flour and stir vigorously until ball forms or pulls away from sides of pan. Remove from heat. Beat in eggs and add Swiss cheese. Drop by heaping teaspoonful on greased cookie sheet. Bake at 400 degrees for 20 minutes. Split in half and fill with your favorite filling (ham salad, tuna salad, etc.).

Makes approximately 20.


Baja Bananas recipe

This is terrific served as an accompaniment to any plain meat, roast, fish or chicken entree.

4 large, firm bananas
1/2 cup gewürztraminer
1/4 cup butter or margarine
1 teaspoon curry powder
2 tablespoons firmly packed brown sugar

Heat oven to 350 degrees F.

Cut bananas in half lengthwise, then in half crosswise. Soak in gewürztraminer for 10 minutes.

Melt butter in a shallow baking dish in oven. Stir in the curry powder and brown sugar. Dip the banana pieces into the mixture, turning to coat well, and bake in same dish about 15 minutes.


CHEESY BROCCOLI AND RICE

1 c. celery, chopped
1/2 c. onion, chopped
2 c. cooked rice
1 (10 oz.) pkg. frozen chopped broccoli
1 (10 oz.) can cream of chicken soup
1 (10 oz.) can cream of mushroom soup
1 c. Velveeta cheese, cubed
1 (4 oz.) can mushrooms



Fresh Fruit Salad

INGREDIENTS:

* 6 peaches, peeled, pitted, and chopped
* 1 pound strawberries, rinsed, hulled, and sliced
* 1/2 pound seedless green grapes
* 1/2 pound seedless red grapes
* 3 bananas, peeled and sliced
* 1/2 cup granulated sugar, or less, to taste
* .
* Dressing:
* juice of one lime
* 1/2 cup pineapple juice
* 1 teaspoon ground ginger

PREPARATION:
Combine chopped and sliced fruits in a large serving bowl; toss gently. Sprinkle with sugar. Whisk together remaining ingredients in a small bowl or 1 cup measure. Pour dressing mixture over fruit and toss gently to combine.

Cover and chill the fruit salad thoroughly before serving.
This fruit salad recipe makes enough to serve about 10 to 12 people.

most people will eat 2 sandwiches and pick at the fruit and veggies. you should probably have 2 maybe 3 cucumbers and maybe some broccoli too. in the past i have notice people eat more fruit than veggies so make sure you have plenty. as for the buns, make sure you have at least 2 per person.
cheese: cheddar, swiss, mozzerella, colby, just an assortment of cheeses

The general rule is to plan for 4oz of meat per person and 1 cup of veges. I'd up the fruit platter a bit and include some strawberries as well. Add some rolls and butter and you should be fine.
