I keep hearing a word on TV or in movies that sounds like "essay". I know that is not spelled correctly. I've heard the same word used in different contexts. One was some guy threating someone saying "you better watch out - essay" and the other one was to a woman "you are looking real fine - essay". Thanks.

mostly it just serves the same purpose as "man" not when used in normal situations only with friends or enemies. it really just fills in parts of the sentence. like "what's up man?" "Hey man check it out" stuff like that

It's definitely "ese" which can mean "that", "that one" or "that man" and is colloquially used to say "man", like we do in English at the end of a sentence.

I can't imagine what sounds like 'essay' except maybe 'yo se' (I know). Where does the stress fall? That could help....

it's mexican slang for "dude". it can be used when talking to a friend OR an enemy. there's no "right" way to spell it since it's slang, but i've always seen it spelled "ese".
Example
"Hey ese! where have you been?" or
"I'm gonna slit your throat ese"

It's spelled "ese". It's pretty much like our way of saying "man". "You better watch out, man!" "You are looking real fine, man!"
