I create a dressing out of mayo, a little mustard, and a little catsup. I add a little Worcestershire sauce and minced garlic. Then I take my potatoes, hard boiled eggs, and diced onion and add to the mix. Since I love dill, I'll either put in fresh dill weed or chopped kosher dill pickles. Salt and pepper liberally. Toss and refrigerate for a few hours. I also make a red potato salad with sour cream and bacon.

I add dill pickle relish (that way I don't have to chop it), chopped onions & a little chopped green pepper (optional). Actually, I chop my celery & hard boiled egg as well. You could add a little mustard to give it some zing if you want. The nice thing about potato salad is its versatility. You can fix it anyway you want and leave out those ingredients you don't like.

potato (cut in cubes of desired size)
grated onion
chopped celery
chopped green peppers
few teaspoons of sweet pickle relish
parsley
grated carrot
finely chopped (or grated) hard boiled eggs
salt and pepper
mayonnaise
Mix while potatoes are still warm. It lends to the flavors going through your salad. I like to put everything together but the salt & pepper and mayonnaise while the potatoes are cooking. Then I add the potatoes and those last ingredients and mix.
Chill for 2-3 hours.

Did you add salt and pepper or maybe some garlic powder? And don't forget the mustard!
I don't like "crunch" in mine so I just go with potatoes and lots of boiled egg white. I use a bit on onion powder.
For my dressing I mix mayo and Miracle Whip and yellow mustard.
But depending on what you like, you can put just about anything in there. My Mom used potatoes, onions, eggs, celery and pickle relish.

I don't add much else other than that really. Sometimes a few slices of onion, or some onion powder if you would perfer just the flavor. And pickles are nice chopped up, or for a short cut you can put just a dash or dill relish.

I like to add some finely chopped cucumber and a touch of Italian salad dressing (along with the chopped onions, mayo, etc.). Chopped dill pickles or black olives are good, too.

My recipe is Salad dressing, mustard, sweet pickle relish, onions, eggs, green pepper and a jar of pimentos. Finish with a dash of salt and pepper to taste.

When I make my potato salad I always add a couple of squirts of mustard.I also add a chopped ren onion.It just seems to give it a extra bite.I put papraka on the top when done,just for a little color.
