It has to do with the Church not having the authority to ordain women. It's like marriage: the Church is the bride and the priest is the bridegroom, just like the Church is the bride to Christ and He is the bridegroom. A priest operates in persona Christi - the person of Christ - when he uses his priestly duties. Through the Holy Spirit, the priest becomes like an instrument for Jesus, becoming the bridegroom for us, the Church (the bride). If a woman tried to fill that role, it would be like the bride with the bride, which would be homosexual.
I hope this isn't confusing but it's the best way I know how to explain it. The Church simply does not have the authority to ordain women. Today that's considered a very unpopular stance, since women occupy nearly every position that men do, but when it comes to the priesthood, it requires a man. Always have, always will.

Women are not priests because the Apostles chosen by Jesus were not women. The Church is following the example of Jesus by not allowing women to be priests. If there are fewer nuns now it would not be because of limited roles. If the roles are limited to just being a nun wouldn't that cause an increase in the number of nuns?

Actually in the Catholic newspaper in my area there was a report that there are more novices--future nuns entering the convents during this past year.
The women in the Catholic Church may not hold the Heirachy positions, but we are not unheard......
A friend of mine who is a priest told me once when he wants something done he goes to the women, because we are the force behind the Church.....
Catholic women are not subserviant.....
