I am putting a T-5 tranny in my mustang and if you take off too fast in 1st gear it will pop out of gear. What is causing it to do that?

Worn thrust washers in the gearbox. Helical gears (gears with the teeth cut on an angle) are quieter than straight-cut gears, but tend to push sideways. As the transmission wears, this sideways thrust wears out the brass washers at each end of the gear cluster. Eventually, the extra play inside the box lets the gears move enough that they pop out of gear. Unfortunately, the only fix is to rebuild your gearbox. The good news is that it isn't a very hard job - I've done it a half dozen times over the years (I have a bad habit of buying worn out cars, I guess!)

generally its a broken tooth on the gear, worn gear or a bad bearing, so unless you want to hold it in gear while in 1st, its gonna need to be fixed or replaced. the only other thing I can think of, if it has a performance shifter installed, and it has limit adjustments on gear engagement, the adjustment might be not allowing full engagement of the gear.

sounds to me like the detent is messed up. it is a spring and ball set up to hold the shift linkage in gear. internal problem. if you just bought the trans take it back and ask them why.......

Worn synchronizers, bearings, or a combination of both.
