Queensland is a big place. To give you perspective it takes two days straight to drive from Brisbane to Cairns. Once you leave south east qld, and go beyond bundaberg, it is quite sparse. So it depends of how much time you have and if you are driving or flying.
If driving:
Try Rainbow Beach, which is on the mainland across from the southern tip of Fraser Island. Is has great, deserted beaches, and one street only. 3hrs drive from Brisbane. A great resort also called Rainbow Shores. You could also go to Noosa, which is touristy, but still very pretty and great beaches with warm waters. 2hrs north of Brisbane
Agnes Waters is in the middle of nowhere and has the best most northern surf beaches in Australia. 6 hrs drive from Brisbane
If flying:
get yourself to Airlie Beach, and head out to the Whitsundays. there are heaps of Island to choose from
Also, dint forget there is some great spots off the coast, such as rainforests around the Gold Coast Hinterland, they are really spectacular.

My favorite spot is Agnes Water and the Town of 1770, which are about an hour North of Bundaberg. It's 200k south of the tropic so the weather's great there. It's a small town with a lot of different activites, it has both surfing and diving on the reef as it's at the bottom end of it, and is the last surf spot on the east coast. The town itself is relatively new, 12 years ago, there was only dirt road into town. It has been known as a surf break for years, attracting those surfers who wanted to get away from the commericalization they found in Byron and Surfer's.
I stopped in Agnes for 2 nights and stayed for over 3 months, so if you're looking for a nice chill spot not too far up, take a look at Agnes, I don't think you'll be disappointed
Finally, it has the best hostel in OZ in it, if you're up for hostels.

go to townsville - 4 hrs south of cairns and better place - or try sunshine coast better than gold coast - sunshine coast is more laid back - more markets, pretty warm still, but for not a lot of people then you would have to go mission beach which is up north Qld too or wide bay area, caloundra is nice place - not too many people. your like me dont like crowded places - its nice where I am and not too many people and still warm - beautiful day today but its only 1hrs drive sth of cairns and there is plenty of smaller beaches around like where I live at flying fish point outside innisfail - gorgeous weather at present

Try Mackay. Its a nice town with friendly people and not too far to the whitsundays from there.

you can go to the Gold Coast, it's closest airport is Coolangatta - its a great place for tourists, you'll find all of the theme parks etc and if you go in the off season (other then during Nov-Feb) you'll find it very busy only during the weekends
