Either oil can be substituted for the olive oil. Keep in mind that the finished product will lose the distinctive olive oil taste, and the nutrition information for your recipe will change based on the fat type used.
I'd personally go for the vegetable oil over the peanut oil, and I might lower the amount a bit (1/3 C seems a bit much, but no quantity was listed for the potatoes).

INGREDIENTS
1 1/2 pounds new potatoes, quartered
2 tablespoons olive oil or vegetable oil
2 garlic cloves, minced
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper
DIRECTIONS
Combine all ingredients in a plastic bag; toss to coat. Pour into an ungreased 13-in. x 9-in. x 2-in. baking pan. Bake, uncovered, at 450 degrees F for 35 minutes or until potatoes are tender. Remove from the oven and cover with foil to keep warm while broiling the fish.

You can substitute just about any oil for olive oil, but it will alter the flavor. Olive oil is quite good for you and it's not fattening. Besides, it has much more flavor than the other oils, such as peanut, vegetable, sun flower, etc. Dave

Yes, they are both tasty. Olive oil is usually recommended because it is so much better for you. Peanut oil is not that good for you, but would add the nutty flavor, vegetable oil depends on which one or ones were used for which taste you get.

Use the vegetable oil... hopefully it's canola. That's healthier than most. But be sure to buy some olive oil. It should be a staple among your cooking supplies... healthier, and for many foods... tastier.

You can use the others but olive oil taste the best for some recipes like that one and it does the best at reducing your body's cholesterol.

I would use veg oil instead. But since it has no flavor add salt and some dried herbs too if they aren't in the recipe.

vegetable oil works well since peanut oil is just fat and extra saturated fat is not always healthy. have you tried grapeseed oil. it's the healthiest oil there is.
