Why is it that when one person speaks of someone dying for their Religion, it means that Religion is true. Yet evidence of other people dying for their Religion isn't counted towards how truthful that Religion is... it simply means that other person is deceived or a liar?

Are people's ego's really that big to think that they can make these types of Double Standards stick and that everyone will simply fall in line with it?

You pretty much hit the hammer on the nail with everything that you just said. Well that's what's known as a double standard my friend. And yes at times certain people's egos are that damn big.

I don't think just because someone says that someone died for their religion makes it true. It may mean that the person dieing thought that it was right. But there are lots of religions. They don't all teach the same thing, so they all can't be right.
Some martyrs I believe are with the true religion, others are deceived.

YES, the ego is big and so big i know of some religions who have wrote their own bible and what god hates some churches are condoning the sin and making it OK, other wise they are saying we don't need Jesus Christ for forgiveness of sin because we condone the acts.
