If you are walking around and you grab or rub your girlfriends butt, is that sexual assault since she did not consent to it?

Of course not.For me that is an expression of love and care about the person.I don't see nothing wrong with that.I think sexual assault is more than a simple butt touch ( in your case ,of course).So,why did you ask?.
