This meatloaf version became a family favorite in many households in the 1950's. The key is in the onion soup mix and the mixture of ground beef with pork sausage for added flavor and moisture.
INGREDIENTS:
1-1/2 pounds ground beef (chuck is best)
1/2 pound ground pork sausage (seasoned or not)
2 eggs, lightly beaten
1 cup fine bread crumbs
1 large clove of garlic, pressed
1/2 cup minced sweet onion
1/4 cup minced green bell pepper
1 tsp dried oregano, crushed
1 teaspoon kosher salt
Freshly ground pepper to taste
1 Tbsp Worcestershire sauce
1 package dry Lipton's Onion Soup mix
1/2 cup milk
1 (6-ounce) can tomato paste, divided use
2 to 4 strips bacon, cut in half (optional)
PREPARATION:
Preheat oven to 350 degrees.
Combine ground beef, pork sausage, eggs, bread crumbs, garlic, sweet onion, bell pepper, oregano, kosher salt, pepper, Worcestershire sauce, onion soup mix, milk, and half of the tomato paste.
Gently mix only until combined. Do not overwork the meat or it will become tough. Form into a loaf. Cover with the remaining half can of tomato paste. Weave the bacon strips over the top.
Bake 1 hour. Let meatloaf rest 15 minutes before cutting to serve.
Yield: 6 servings

6 ounces garlic-flavored croutons
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot, peeled and broken
3 whole cloves garlic
1/2 red bell pepper
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoon kosher salt
1 egg
For the glaze:
1/2 cup catsup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey
Heat oven to 325 degrees F.
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.
Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.
Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

I cook meatloaf in the microwave. It takes 18 minutes approx. and it's delicious
1 glass Pyrex pie plate
1 lb ground meat
1 egg
1/2 cup breadcrumbs
1/4 cup of celery minced in the blender
3/4 tsp garlic powder
1 tsp onion powder
1 tsp dry parsley(OPT)
1/2 tsp salt
1/4 tsp pepper
1 level tsp dry mustard powder
1/4 cup water
1 cup ketchup reserved for topping
Mix all ingredients together except ketchup
Place an unbreakable glass in center greased Pyrex plate.
pie plate and spoon meatloaf mixture all around the plate and glass center evenly.
Cover with wax paper and microwave on high 9 minutes
Remove to cover top of meatloaf with ketchup
Back into the microwave and cook for 9 more minutes covered with wax paper.
Remove, Let stand five minutes, Slice and serve.

6-12 servings 2 meat loaves 1¾ hours 15 min prep
Change to: meat loaves US Metric
2 lbs ground beef (top round or sirloin)
1 lb ground veal
1 lb ground pork
1 cup cottage cheese
1 cup fresh breadcrumbs
1 1/2 cups finely chopped onions
3 eggs, beaten
1 cup finely chopped green peppers
1/2 cup chili sauce
salt, pepper to taste
1/2 cup red wine
1/2 cup tomato sauce
1/2 cup chili sauce
Heat oven to 400 degrees.
Combine beef, veal and pork in large bowl; mix thoroughly.
Add the cottage cheese, bread crumbs, onion, eggs, green pepper and 1/2 cup chili sauce.
Season with salt and pepper to taste.
Divide mixture in half and place into two 9-by-5-inch loaf pans.
Pour 1/4 cup of the wine over each meatloaf.
Mix the tomato sauce and 1/2 cup chili sauce in small bowl.
Spread half of the mixture over each meatloaf.
Bake at 400 degrees for 30 minutes, basting frequently with pan juices.
Reduce oven temperature to 350 degrees and bake another 50 to 60 minutes, until juices run clear.

Chicken Cordon Blue Meatloaf:
1½ hours 30 min prep
6-8 servings
2 lbs ground chicken
6-12 ounces Italian seasoned breadcrumbs
2 eggs
6 ounces smoked ham, sliced
4 ounces smoked gouda cheese, shredded
6 ounces French-fried onions
3 cups parmesan cheese
2 tablespoons minced garlic
1 teaspoon garlic salt
2 teaspoons black pepper
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
1. mix ground chicken, bread crumbs, eggs, 1 cup parmesan, minced garlic,garlic salt, black pepper, cayenne pepper, onion powder, mix well.
2. take half of meat mixture and put in bottom of large loaf pan. then we layer the middle. 1 cup parmesan cheese, 2 oz. gouda, 3 oz. ham, 3 oz. french fried onions. then repeat same layer agian.
3. top with remaining meat mixture and press around sides of pan to enclose the layers.
4. bake in preheated oven at 375 degrees for about 1 hour. use meat thermometer if possible.

1/4 cup ketchup
a few sprinkles of pepper
Mix all these ingredients together and form into loaf. Bake at 350 degrees about 45min-1hour. Squiggle additional ketchup on top 1/2 way through cooking.
You can't miss with this recipe, everyone will love it!

McCormic has a good packet of seasoning mix for meatloaf...if you add onions you must shred them not chop...so they will cook
