Its too hot to cook today! I got some of those pre-cooked chicken strips, and Im trying to find something that is either no-cook or microwave only, and super simple. Any ideas?

I'm thinking you're in the market for a lovely spinach salad:

1 bag organic baby spinach, rinsed and stems removed
1 can mandarin oranges, drained
1/2 cup candied walnuts
1/2 cup feta cheese
1 cup chicken strips or cubes
French Dressing

or perhaps an Asian Chicken Salad:

1 package cole slaw
1 package chicken strips
1 package ramen noodles (noodles only)
1 package pineapple chunks
1/4 cup vegetable oil
1 T sesame oil
3 T rice wine vinager
1 tsp sugar
2 T toasted sesame seeds

Blend oils with vinegar and sugar. Set aside. Toss cabage, chicken and pineapple together. Break up ramen noodles and add to the cabbage mixture. Toss with sesame seeds and dressing and season with salt and pepper to taste. Let chill for 30 minutes to 1 hour to blend the flavors.

or Pasta Salad:

1 box Rotini
1 bottle Berensteins Cheese Fantastico Salad Dressing
1 red bell pepper, seeded and chopped
1 bunch green onions, chopped
1 chub dry salami, cut into cubes
1 4 oz container feta cheese
1 can sliced olives

Cook pasta to al dente and drain. Toss with remaining ingrediants and chill over night. The pasta will absorb the dressing, so toss again before serving.

or you can create a Chef Salad using leftovers and your imagination!

I use a toaster oven to cook chicken, fish etc. Does this count as an oven? I have 2 microwaves because I found out some things cook for different times. I only use the large oven for pies and cookies. The book stores should have plenty of books on microwave cooking. I used to bake cakes in a microwave about 28 years ago when we got out first one, still have it and use it everyday. I bake potato's in it all the time, about 10 minutes for a potato that weighs 1 pound, Cook for 5 minutes on one side and turn over and cook for the other 5 minutes. if you over cook in a microwave the the food becomes hard in places so watch what you do. Just make sure you punch holes with a fork before you cook it.

I really don't like the idea of cooking in a microwave, but if that's what you want you can cook the chicken in the micro, chill it down and make some nice chicken salad sandwiches.

Ok, everyone says chicken salad for today. What about tomorrow? Bar-b-que or tuna salad, what will it be? I make a great tuna
2 cans of tuna drained
celery
onion
1/2 red delicious apple, chopped
1 boiled egg
miracle whip
squirt of mustard
dill relish
Mix all the ingredients and enjoy

Another idea...Bar-B-Que Chicken
I inject my chicken with Jack Danirls Bar-B-Que sauce, wrap in foil and grill. Yummy!!!

Chef salad.

Cut up some lettuce and tomato, make guacamole, obtain shredded tex-mex style cheese, and heat chicken strips. Provide soft burrito wraps. Accompany with a salad of red beans, black beans, mandarin oranges, corn, with a dressing of 1 tblspoon lemon juice, 1/4 c. orange juice, a dash of olive oil, and a couple of drops of honey.

Chinese Chicken Salad.

Shred some lettuce, add your choice of veggies top with chow mein noodles, dry roasted peanuts, chicken strips and ginger sesame dressing.

Make a salad. Add the chicken and some cheese on top and have a chef salad.

You can microwave most frozen or fresh vegetables. Or just make a salad with some fresh raw veggies such as snow peas, sugar snap peas, lettuce, tomatoes, and broccoli.
