Hi, In my sons 6th grade Home EC. Class the teacher has assigned a project in wich the students have to make a recipe booklet with a healthy recipe and bring samples to the class. My son keps bugging me and asking me what to make. The food has to be healthy (no junk foods or sweats) Amy Ideas for my 6th grader?

How about whole wheat mini veggie pizzas. Just make a whole wheat quick bread (non yeast bread), roll into little balls and then flatten into mini pizza's. Top with a little pizza sauce, some chopped fresh veggies that you son likes and a little sprinkle of cheese. He'll have a definite hit with the other kids! For an even quicker version just use halved whole wheat mini bagals and make mini pizza melts.

How about "Fun Fruit Kabobs?"

Ingredients:

1 apple
1 banana
1/3 c. red seedless grapes
1/3 c. green seedless grapes
2/3 cup pineapple chunks
1 cup nonfat yogurt
1/4 c. dried coconut, shredded
Utensils:

knife
2 wooden skewer sticks
large plate

Directions:

Prepare the fruit by washing the grapes, washing the apples and cutting them into small squares, peeling the bananas and cutting them into chunks, and cutting the pineapple into chunks, if it's fresh.

Put the fruit onto a large plate.

Spread coconut onto another large plate.

Slide pieces of fruit onto the skewer and design your own kabob by putting as much or as little of whatever fruit you want! Do this until the stick is almost covered from end to end.

Hold your kabob at the ends and roll it in the yogurt, so the fruit gets covered. Then roll it in the coconut.

These are very healthy and average around 150 calories per serving.

Veggies and Hummus

Turbo Hummus
2 to 3 cloves garlic
1 can garbanzo beans (chickpeas), drained and liquid reserved
2 to 3 tablespoons smooth peanut butter
A handful fresh parsley leaves
1 lemon, zested and juiced
Pinch freshly ground black pepper
Pinch kosher salt
1/3 cup extra-virgin olive oil

Chop the garlic finely in a food processor. Add the beans and 1/2 of the reserved liquid and process finely or to desired consistency. Add the peanut butter, parsley, lemon zest and juice, black pepper, and salt. Process until it forms a paste. Drizzle in the olive oil and process until it reaches the consistency of mayonnaise.

I would make fruit kabobs and a yougart dip to use on the side.

Kabobs;
red seedless grapes
cantalope dices
diced pinnaples
apples diced
marchino cherrys

Place on skewers

Yougart dip;
1 large container of plain yougart
1 can crushed pinnaples
1 cup of coconut
mix well together

This tropical treat is healthy and the kids will love it

I helped my sister make a Spanish citrus salad for her Home Ec project when she was around 7th grade. She told me the class loved it and we still make it frequently to this day. Hope this link helps. (This is like the recipe I used.)

Try a hawaiian salad! I think its quite healthy regardless of the whipped cream and marshmellows because of all the fruit.

You could also do it without the marshmellows - although I prefer it with them. This should be quick and easy for you and your son!

I think that you should have your son make smoothies. If you go on www.flowercarole.com. There are plenty of smoothie recipes and then you son can just do that for his project plus it is simple and easy.

You could do a homemade trail mix using pretzel sticks, raisins and peanuts, maybe some other stuff. YOu can find recipes on allrecipes.com

Peanut butter and jelly. It's healthy, not messy, and it doesn't take very long to make. :D

Maybe make it with whole wheat bread... and 100% fruit preserves and organic peanut butter or something like that.

Of course, I'm a bit of a slacker... Vegetable soup would be quite simple also...

Don't you hate it when your kid's project turns into YOUR project?

simple!!! dips are very easy... spinach dip(check out the package back of knorr vegeteble soup mix)
lasagna roll ups or stuffed shells(cooked lasagna noodles or shells... stuff with ricotta cheese , top with sauce and mozzarella and bake(roll the lasagna noodles after spreading the filling))
pasta salad... (tri colored rotini, bottled italian , creamy italian, ceasar or ranch dressing finely diced onion and celery... add cheese, diced ham,pepperoni, or turkey , diced tomatoes , cukes, broccolli... what ever veggies you want) MY KIDS FAVORITE!!! in fact, thats the one we did!! (last year!!)
