a. It's wild not farmed.
b. Has to be a left legger, if the right legs are longer than the left they have less taste.
c. Boil it live, if it doesn't scream when immersed, it's not fresh.
Served with chappit neeps and tatties it rejuvenates both the soul and the ability to down a quality malt.

They are tricky creatures to catch. Let the blood drain out from it's neck then pluck and wash it before cooking in the oven with tatties and neeps - lovely!

Make sure you feed it with lots of meat and barley in the days leading up to cooking. Then boil it in a large pan of water. You gotta shave it first and dont forget to remove the legs (never much meat on them anyway)

obviously it's two outer legs are longer than the other two to enable them to run round their hills so you should even them up with a carving knife. But i think they are too sweet and it would be cruel to kill them so just keep them as pets - i believe they're very entertaining especially when they fall on their backs drunk.
