The legal term or action you refer to is known as the "Age of Majority."

Florida Statutes § 743.07

In Florida the age is 18 in MOST cases however there are exceptions to include drinking (21) and participation on a Grand Jury (21).

There is also one other term known as "emancipation." This is where a minor is no longer dependent upon his custodial family. If under 18 the person must be able to maintain control of their own affairs as an adult. Through emancipation, the individual gives up all rights to financial obligations by the custodial family which would include child support.
