Yes, you can use melting chocolates, chocolate chips or even chocolate candy bars or nuggets (without nuts or other krispies)...Here is a recipe source I use in making my spoons...if you want to make them colorful just dip them while still warm into any kind of candies or sprinkles that you like or that you find appealing...ENJOY!!!
Chocolate Dipped Coffee Spoons
Ingredients:
Chocolate
good quality plastic spoons
* liqueurs, optional
*THIS IS HOW YOU GET TO MAKE SO MANY DIFFERENT KINDS
* extracts, optional
Instructions:
These are good in coffee or teas or just by themselves. Use different liqueurs and extracts to make different flavors. There is no end to the flavors you can make. Melt chocolate until it is liquid, making sure that it doesn't scorch, you can do this in the microwave. Add extract or liqueur of choice. Then dip the spoon into the chocolate and lay the spoons with their handles over the edge of a wax paper lined cookie sheet until set. Don't just dip lightly you want a nice puddle in the spoon part and part way up the handle. You can drizzle white chocolate in a design over dark or milk chocolate or dip 1/2 of spoon in dark and 1/2 in white chocolate. For an elegant look wrap each in celophane with a glittery ribbon or if country is more your style tie the wrap with raffia or twine.

Chocolate Covered Spoons:
45 min 40 min prep
24 spoons
1 cup semi-sweet chocolate chips
24 plastic spoons (clear, white, colored YOUR CHOICE)
chopped decorative candies (Andes chocolates or Smarties or peppermints or mints or M&M's, the choices are yours)
1. In a microwave safe dish, melt chocolate for 1 to 2 minutes stirring until smooth.
2. Dip spoons into chocolate tapping the handle against the side of the bowl to remove excess chocolate.
3. Place on waxed paper and sprinkle with candies.
4. Let stand until firm or you can chill in freezer until firm.
5. These can be stored in the freezer. Just let stand at room temperature for about 20 minutes.

Yes you can as long as it's baking choc. and not cookie chips.
Cookie chips will not melt.
